When I am cooking dinner, I like to spend a majority of the time preparing the main dish and less time preparing the sides. Efficiency is key which is why the sides should be something I can prepare quickly, am I right? However, a side dish does not have to be boring just because it is quickly prepared. These potato wedges are absolutely delicious and have the perfect amount of seasoning. Not to mention, they are also super easy and quick to make which is perfect for nights that are busier than others.
For this recipe, preheat the oven to 430 degrees F (220 C). As always,wash the potatoes before cutting them. Once all dirt residue is removed, slice the potatoes into wedges by cutting the potato in half several times until your wedges are at your desired size. Generally, you should get 4-6 wedges from each potato.
Now that all of your wedges cut, it is time to prepare the seasoning. Begin by measuring out the appropriate amounts of olive oil, sea salt, garlic powder, and oregano. Then, combine these ingredients in a small cup or bowl. Small Tupperware works great for this! Using a spoon, mix these ingredients together until evenly dispersed.
Now, pour the mixture onto your baking pan. Use a flat silicon spatula for spreading to ensure that each area of the pan is covered with the mixture.
Next, add the potato wedges to the pan. Using your hands, toss and scramble the potato wedges around the pan so that each one becomes completely coated in the mixture. Once all sides of the wedges have seasoning, position the wedges onto the pan equidistant apart, avoiding crowding in any area.
Now, if you enjoy citrus as much as myself, use a lemon to coat the potatoes with some of its juice by squeezing the lemon from above back and forth across the pan. If you do not enjoy the lemon flavor, however, these wedges still taste just as great without the added pop of flavor.
Next, place the pan in the preheated over for 25 minutes. Halfway through, take the pan out of the oven and flip and switch the location of the wedges.
Allow the wedges to cool for about 5-10 minutes before serving.
