Looking to add more veggies to your diet but tired of the usual ways? Look no further. This Chopped Balsamic Veggie Dip is not only perfect for dipping chips at summer BBQs but also for deliciously complimenting any meal. I love adding Balsamic to just about anything. Of course it tastes delicious paired with some of my favorite vegetables, hard-boiled eggs, and feta cheese! Eat this on it’s own, as a side, with chips, on top of mashed potatoes and more!! The possibilities that you can create with this healthy veggie filled recipe are endless. Not to mention, it is great to have in the fridge for making meals quickly and stress-free. We have been enjoying this nutritious side all week since I have made it, and I’m so excited to share it with you.
Here is what you need for this recipe:
The veggies and hard-boiled eggs in the recipe need to be chopped and diced. Additionally, the corn and carrots should be cooked or steamed before being added to the mixture. I used frozen corn this time around and microwaved it by following the directions on the package. For the carrots, I chopped 2 fresh carrots and steamed them in the microwave. To do this, add 1 tablespoon of water and the chopped carrots to a covered container and microwave them on high for 5-6 minutes.
Once these steps are complete, add the cucumbers, tomatoes. carrots and corn into a large bowl and mix them together. I used my hand to mix the vegetables but used a spoon for the next step. I love all the colors in this recipe!
Add the feta cheese and hard-boiled eggs to the mixture. It Make sure everything is mixed really well before proceeding to the next step.
Add the salt, oregano, and pepper and mix again. Then, add the balsamic vinegar and do a final mix. At this point, I moved my dip to a nice salad bowl for serving.
And, buon appetito! Keep this mixture in the refrigerator until you are ready to eat it and make sure to serve it cold.
